I love high fat, did I ever mention this?
This was so super simple to make, from start to finish it was around 20 minutes. And as it was cooking my daughter was like, Mom, what smells so good? Guess who got the only serving I made that day?

This debunks the theory that you can’t have much veggies while on a true ketogenic diet, or you can’t put yourself into nutritional ketosis with veggies. I say, bah humbug. Don’t ever tell me you can’t do something.
I do have to admit however, that this is awfully GREEN – it needs some color, so if any of you out there can think of an addition that would give it some color, I am all ears! I would have to manipulate the other veggies so that the percentage would remain the same, but quite honestly, that isn’t hard. Throw it out to me, test my limits!

Creamed Spinach and Chicken on a Bed of Asparagus
4 servings
8 oz chicken breast, no skin, no bone, R-T-C, no skin, no bone
8 Tbs Mayonnaise
4 oz sour cream
8 Tbs Parmesan Cheese
10 oz Spinach, frozen
16 oz Asparagus
8 Tbs Butter
Thaw and drain spinach.
Boil chicken and shred. Let cool.
Mix mayo, sour cream and Parmesan cheese in a bowl, then add chicken and
thawed spinach. Heat.
While chicken and spinach mixture is heating, cut asparagus in bite size pieces.
Sauté asparagus in butter.
Lay on plate and add chicken and spinach mixture on top.

How about sweet red pepper or diced tomatoes?
I think red pepper is an excellent idea, and would go nicely with the concoction, and you really wouldn’t need much!
