Like I mentioned last week, I am on a pound a day of raw kick. I know this is a stupid time of year for it, because in most places, it’s cold.
There is never any rhyme or reason for what I do, when I do it. HA!
I have been scouring my archives, and the internet to find recipes that enable me to get this in with no muss, no fuss.
This recipe calls for 2 cups of cabbage, the weight on that is about 5 oz, then for the apple, which mine was about 5 oz – so for just one meal I am getting 10 oz of raw. If I was on P2, all I have to do is find another 6 oz somewhere and I am set!
This might be a little sour for some taste buds … just cut back on the amount of ACV and you should be fine. Or add a bit more sweetener. When you cook the chicken, immediately pour it over the cabbage and it softens it a bit without cooking it. Then chill and it’s outstanding! I love it with lots of black pepper.

Chicken Mustard Coleslaw with Apple
1 serving
10 minutes prep
1 hour 20 minutes start to finish
Dressing/Marinade Ingredients:
1/4 cup apple cider vinegar
1/2 cup water (mix with a packet of sweetener)
1.5 tbsp spicy brown mustard
1 dash salt
1 dash pepper
1/4 tsp onion powder
1/4 tsp garlic powder
Slaw Ingredients:
3.5 oz chicken breast, skinless and boneless, diced
2 cups cabbage, shredded
1 medium apple, diced
Prepare the dressing/marinade ingredients and put half in a baggie with the chicken and marinate for about an hour.
Place cabbage and apple in a large bowl.
Remove chicken from baggie (reserving liquid) and place in a preheated skillet and pan fry till it turns brown. Add reserved liquid and let simmer for a bit on low, and moisture is reduce significantly.
When done, place over cabbage and apple, use enough dressing for satisfaction.

Serving Idea: Great as a make ahead and chill salad, all in one. It actually tastes better the next day so that the vinegar has a chance to pickle the cabbage. Nummy!
