Recipe: Creamy Chicken with Cabbage and Apples

P3 and P4 LegalIn case you haven’t noticed, this week’s recipes are about cabbage and apples. I had a plethora of both that I needed to use up.

The original of this recipe was to be made with bacon instead of chicken. I opted to try it with chicken, modifying some of the ingredients.

In retrospect, I think it would be better with the bacon, although with the chicken it was most tasty!

As I was enjoying it for lunch, something came to me … it was a memory of a scene from The Brady Bunch where Peter Brady goes into the kitchen and starts with the “Pork Chops and Applesauce” – do you all remember that?


To this day, anytime I have a pork and apples meal, I think of that scene! I am surprised I found it on YouTube!

Ok, enough of the travel back in time bit.

I hope you enjoy!  It’s a very hearty meal, perfect for cool nights.


Creamy Chicken with Cabbage and Apples
8 servings (almost 3/4 cup per serving)

30 minutes prep
45 minutes start to finish

1 tbsp olive oil
8 oz chicken breast, no skin/bone, chopped
1 large onion, chopped
salt and pepper to taste
1 tablespoon sweetener, or to taste
2 tablespoons apple cider vinegar
1 head green cabbage, cored and chopped
2 large Granny Smith apples – peeled, cored and thickly sliced
1/2 cup chicken stock, or as needed
1/2 teaspoon coriander seeds (mustard, dill or celery can work)
1 pinch nutmeg
1/2 cup sour cream

Heat oil in large pot, add chicken and cook until done.  Add onion and season with salt and pepper.  Cook until translucent.  Sprinkle sweetener and vinegar over the mixture and blend well. Add cabbage and continue cooking, uncovered until cabbage is reduced and starts to soften.

Stir in apples, stock, and seeds.  Cover and cook on low for about 30 minutes, stir occasionally.  Add more stock if needed and cook until cabbage is soft, but not mush.

Remove from heat and add the nutmeg and sour cream.
