Recipe: Apple Chicken Slaw

P2One thing I hear over and over again while I coach is this:

I need easy to make ahead meal ideas for P2.

Biz to the rescue!

This is one of those recipes that you can make the night before and it stays well for a day or more.  It’s an all in one meal so travels very well.  It takes only 5-10 minutes to prepare so you don’t have that excuse that something takes too long to make so I had to stop at a drive thru to eat.

Top it off?  It’s tasty!

And one more thing?  At my local Winn-Dixie I can get canned chicken that only contains chicken, water and sea salt, so even easier!

Apple Chicken Slaw
1 serving

10 minutes prep
20 minutes start to finish

1.5 cups cabbage, shredded
3.5 oz chicken, cooked and diced
1 apple, peeled, cored and diced (optional: leave skin on for color)
1 tsp mustard
1 tbsp apple cider vinegar
1 packet of sweetener, or to taste

Mix mustard, apple cider vinegar and sweetener in a container large enough to hold the other ingredients.  Add cabbage, apple and chicken and toss to coat.  Eat immediately or refrigerate for later.

Serving Idea:  Great for pack and go, or make ahead.

Note:  If you like a little wetter slaw, double the ingredients for the dressing.  It won’t do too much to the calorie count.

  1. All I can say is YUM! I just made this and I am soooo glad I did. I was hesitant be ause I don’t usually like mustard but there is so little you can hardly tell! Thanks
