Salmon in a Blanket

Eating on Phase 2 of the hCG Protocol doesn’t have to be boring.

If you are already familiar with The First Step, you will know that with the added nuances, you can get pretty creative.

For example, the adding of salmon as a protein choice opens up windows of opportunity to have a meal that doesn’t feel like you are following P2!  Just look at how appetizing this meal looks, and to think you are still well under 300 calories for a complete meal!

The possibilities are endless with this recipe.  The choices of veggies are entirely up to you.  I always add onions cause it just adds flavor to the meal, however, you could use zucchini or yellow squash, even some broccoli flowerettes would be nummy!  Also, get creative with the type of fish, and the seasonings!

This recipe is a variation of a couple of recipes that are included in The First Step, Baked Fish in Foil and Tilapia in Foil.

 

 

Salmon in a Blanket
Serves 1

10 minutes prep
30 minutes start to finish

4 oz salmon filet
1 tablespoon butter
1 teaspoon lemon juice
salt and pepper to taste
1/2 teaspoon roasted garlic (roasted is optional)
2 ounces sliced onions
4 ounces fresh asparagus spears

Line a large pan with heavy duty foil.  Place onions, asparagus and roasted garlic onto foil.  Sprinkle with salt and pepper.  Place salmon skin side up onto vegetables.  Top with butter and lemon juice.

Wrap foil with an air pocket on top so that the foil does not touch the skin of the fish.

Preheat oven to 400° then bake for 15-20 minutes.  Put broiler on low, open foil and broil skin for 5 minutes until skin gets a bit crispy.  If salmon is skinless, skip last step.

Serving Idea:  If you are trying to conserve calories, you can skip the butter and use it elsewhere in your day.
