What is Paleo anyway?

If you look around the internet, you are going to find a whole host of definitions. But for simplicity sake, consider it basically this:

Meat + Veggie (Fruits in Moderation) + Fat + Herbs/Spices = Happy Paleo

I am not fond of the Paleo lifestyle, preferring more of a Primal outlook, this is a subject for another day, the whole Paleo vs Primal thing.

In any case, I was sent this recipe by a client asking me to give it a shot.  For something that is non-grain, gluten-free, they were pretty darn tasty … if you can get […]

Recipe: Biz’s Confetti Coleslaw

Recipe: Biz’s Confetti Coleslaw

I love food that takes forever to eat.  This is one of those foods.

Because of all the crunching you have to do, even just a small amount takes forever to eat.  It’s perfect if you are trying to do a raw day, and let’s not discount the fact that it’s pretty food.  Look at all those colors!!!

Pretty food that tastes good, raw, and high fat…can’t beat it.  Oh yeah.

Just a note.  The bacon is supposed to be put on the slaw just before you eat it, it will have a tendency to get a little soggy if you don’t.  The […]

Recipe: Spanish Cream

Recipe: Spanish Cream

When I was growing up, this was ALWAYS in the fridge.  It is one of those things you never get tired of.  Recently I found out that some type of meringue is a staple for many cultures.  Most cultures will have some sort of meringue as a normal after dinner snack.  This is no exception.  My Mom tells me that it’s from Portugal, but couldn’t find verification of that?  HA!

When Googling around to see if gelatin was an OK Phase 3 food, I came across this fascinating article.  It’s quite long, so if you want the […]

Recipe: Apple Blue Cheese Salad

Yeah. I am on a raw kick again. I don’t know why I fight it.

I just feel better every time I eat the bulk of my day in raw fruits and veggies. My goal right now it to eat at least a pound a day of raw food. I am not going nuts about it, but I am trying to keep it at a 60% veggie to 40% fruit ratio.

So lately, because my life seems to be all about overwhelm these days, I have started looking for recipes that have a pound of raw in the ingredients. If they don’t, […]

Recipe: Pumpkin Spice Latte

Recipe: Pumpkin Spice Latte

One of my very first experiences with Starbucks was my introduction to the Pumpkin Spice Latte.

I was out with a group of friends and it was a particularly cold day in December in Charleston, SC and the group wanted to stop at Starbucks. At the time, I was against anything having to do with SB cause I thought it was a waste of peoples money. Way too expensive, and really, what was the use. Coffee is coffee.

Boy, was I wrong. ::giggle::

What they neglected to tell me at the time was that it was a “seasonal” thing. Ok, sure, I […]

Recipe: Ricotta Flax Pancakes

Recipe: Ricotta Flax Pancakes

Gotta be honest, pancakes and I don’t get along so well. I am not talking about weight wise, but rather, I just really don’t like them. I have to remember however that it’s not always just about me!  ::giggle::

I went searching for a recipe that I could convert to HIGH FAT that would help those out there that miss this sort of breakfast.  This seemed to fit the bill.

I am not crazy about flax.  There is a certain texture to it that just doesn’t jive with me, and I think the next time I make this I will make it […]

Recipe: Fruity Curry Chicken Salad

Recipe: Fruity Curry Chicken Salad

This is one of my favorite “go-to” recipes.  I usually will always have the ingredients in this recipe on hand and when I can’t find anything else to make, this is an easy choice.

It’s also great as a “to-go” recipe as it travels well in a small cooler.  And if you add it on a bed of lettuce, it can become a complete meal full of protein (bodily fuel for cell and tissue maintenance), fats (for satiation and brain health) and carbs (for energy) without a lot of muss or fuss.

Whoever came up with the idea that curry and […]

Recipe: Black Bean Chili

Recipe: Black Bean Chili

Chili.  Yum.

There are all sorts of recipes for chili’s available.  It’s a long standing recipe that people have made their own for decades.

I never liked chili growing up because I never liked kidney beans.  I didn’t realize until much later in life that chili can mean almost anything!

Over the years, I tend to enjoy white chili’s more than red, however, this is one that I always come back to.  But then again, I happen to really love black beans.  ::giggle::

What is totally awesome about chili is that even though it’s not “high fat” on it’s own, you can make it […]
