Recipe: Chocolate Mug Cake (Dairy and Gluten Free)

My nemesis is not desserts (especially chocolate), so I don’t test them often.P3 and P4 Legal

However, I know that if there is one thing that people miss the most when trying to maintain drastic weight loss, it seems to be desserts.

I try to accommodate.

What I like about this is that it’s only one serving.  Even though it’s legal for P4, and it wont hurt you like it’s wheat counterpart, it’s still loaded with carbs so it’s not an everyday thing.

One serving means you get that craving out of the way, without a whole pan full of sweets staring you in the face for days, making you want to just eat it cause it’s there.  HA!

Coconut flour is odd.  It’s a super duper dry flour that needs lots and lots of liquid to make it work.  If you don’t, then you end up with a crumbly mess instead of something that holds together.

I wasn’t particular fond of the taste (duh, it’s chocolate!) but I found the texture more than adequate and will be experimenting with this more and more in the future (can you say BANANA BREAD???).

Chocolate Mug Cake (Non-Dairy, Gluten-Free)
1 serving

5 minutes prep
10 minutes start to finish

1 heaping tablespoon coconut flour
1 tablespoon cocoa powder
1 tablespoon coconut milk (or almond)
1 tablespoon honey
1 tablespoon coconut oil
1 teaspoon pure vanilla extract
1 egg, mixed

Coat a microwave safe mug with coconut oil (or whatever you use) for help with non-sticking.

Combine all the ingredients.

Microwave for 1 minute 30 seconds, to 2 minutes, just until cooked.

Serving Idea:  Put a dollop of coconut butter (or natural peanut butter) for extra creaminess.  Add chocolate chips for extra flavor.
