Recipe: Easy Peasy Roast Beef

Who doesn’t like roast Beef? P2

Sometimes on P2 we get the idea that food has to be bland and not interesting.  Why deprive yourself of a great tasting meal just because you are on P2?

Like the title says, this is easy peasy, and depending on what cut of beef you use, can be quick (some cuts might require more time simmering).

You can even cook this ahead and freeze in appropriate portions, and grab and go!  If you are looking for a place to fit some clean fats in, then a dollop of sour cream will go nicely with this.  Yum!

Easy Peasy Roast Beef
1 serving

10 minutes prep
60 minutes start to finish

100g lean beef, cut into small bite size pieces
1 tablespoon dehydrated minced onion
1/4 teaspoon onion powder
1/8 teaspoon celery seed
1 cup chicken broth (no MSG)
black pepper to taste

Saute beef in a small sauce pan, with a little bit of the chicken broth for moisture until browned, adding everything but the whole amount of the broth to let the seasonings soak into the meat while cooking.

Add the broth.  Bring to boil, then cover and simmer for 50-60 minutes, or until tender.  For gravy, allow it to simmer for the last 10-15 minutes without the cover to reduce.

Serving Idea:  This is awesome with a dip made with mayo and horseradish.

Note:  This is especially great for the crock pot!  Perfect when you get up in the morning and forgot to take something out, just stick the meat in frozen with the other ingredients, and viola, you have dinner waiting for you when you get home.
