Recipe: Marinara Sauce

P2Marinara Sauce on P2 is so incredibly versatile.  It is a staple when I am doing a round.  I especially like it when I make Zoodle Chicken (P2 legal and recipe coming soon).

First, what is a zoodle?  It’s a cute little name someone came up with who knows how long ago that describes making noodles out of zucchini.  Yeah, whoda thunk you could make noodles out of zucchini???

When you are on the Phase 2 portion of The hCG Protocol, you have to get creative.  And this is creative at it’s best!

I have a kitchen tool that is just perfect for this job.  It’s not cheap, but I gotta tell you, when you have the right tool for the job, it makes life a whole lot easier.  This thing is called a Benriner Cook Helper, and it makes perfect spirals of all sorts of veggies, not just zucchini.  Well worth the price in my opinion, then again, someone gave this to me as a present!  Thanks LINDA!

Zoodle Chicken is a complete P2 meal, and some might balk at the fact that it has zucchini in it, which is not on the approved Dr. Simeons list.  It is definitely one of those things where your mileage may vary, but over the years it has proven to be an additional veggie that works well on P2.

I have strayed.  Which I do a lot.  In any case, use this Marinara Sauce for all sorts of P2 Recipes.  It’s yummy!  I want to whet your appetite for the upcoming recipe Zoodle Chicken using this Marinara Sauce recipe.

Zoodle Chicken 500x375

Marinara Sauce
1 serving

15 minutes prep
20 minutes start to finish

2 Roma tomatoes (approximately 8oz), diced
2 tbsp water
1 clove garlic (minced)
1/8 tsp sea salt
1/4 tsp Splenda
1/8 tsp dried parsley
1/8 tsp dried oregano
1/8 tsp dried basil
1/4 tsp dried minced onions

Heat water in a non-stick skillet over low heat and saute garlic for about 2 minutes; make sure the garlic does not burn.

When browned, remove from heat and let cool.  Just as the garlic begins to turn brown, remove pan from heat. When cooled, add tomatoes and seasonings. Cook over medium-high heat and bring to a boil. Reduce heat to low and simmer, covered, about 10 minutes.

Serving Idea:  Chop up your allowed serving of chicken (3.5 oz) and saute with the garlic, then follow the rest of the instructions. Make some Zoodles, place your Chicken Marinara on the top and you have a complete P2 meal as shown above!

Note:  Zucchini is not on the Dr. Simeons approved vegetable list.  Please use with caution.  At Happily Thinner After, we have found that it works most of the time, but always know that your mileage may vary.
