Recipe: P2 Potassium Salad

P2I wrote an article not to long ago on the value of looking at your potassium numbers in relation to your sodium numbers.

The article leaned toward using the formula contained within during the maintenance phase of your weight control journey.  But some people don’t realize that it is advantageous to follow that rule of thumb during your P2 as well.

I have what I call a “Potassium Day” that you can use on P2 that is almost a miracle for helping you get yourself out of a stall, or to use after a night of indulgence (it can act as a strong diuretic):

Potassium Day

  • Breakfast:  16 oz of coffee with ¼ cup of half and half
  • Lunch:  3.5 oz of grilled cod, 6 oz of grilled asparagus, juice of one half lemon
  • Snack:  P2 Potassium Salad (recipe below)
  • Dinner:  3.5 oz of lean ground beef,  3 oz tomatoes, sliced
  • Snack:  6 oz frozen strawberries, juice of one half lemon

Tomatoes are considered a fruit in the snack and with dinner, so you are still legal with 2 proteins, 2 fruits and 2 veggies.

This whole menu falls under 475 cals – but with a WHOPPING 2400+mgs of potassium and just under 200mg of sodium!!!

For those of you that are following The Biz Buzz Method, you can add 1 tbsp of oil to the salad,  1/2 tbsp of oil to the tomatoes at dinner, 1 tbsp of mayo for the burger and your 60 calories of starch and you will be at your 750 for the day.  And if you pick a high potassium starch such as white potatoes, you can increase the potassium of the day.

Here is the recipe for the P2 Potassium Salad:

P2 Potassium Salad
1 serving

5 minutes prep
35 minutes start to finish

6 oz cucumbers, peeled, seeded and sliced
3 oz tomatoes, diced
½ tbsp minced dried onions (spice)
2 tbsp vinegar
2 tbsp water
Pepper to taste
Sweetener if desired

Mix all together and let set for about 30 minutes before serving.

12g Carbohydrate; 2g Dietary Fiber
0mg Cholesterol; 12mg Sodium; 480mg Potassium

Serving Idea:  This is great to have on hand in the fridge during your entire time on P2 – perfect potassium PUNCH for the day!
