Recipe: Zoodle Chicken

P2One of these is perfect for making this recipe!

That little gadget can go a long way to making Zoodles which are awesome for P2.  Yes, I know that zucchini is not an allowed veggie, but it is for any Bod Squad member.  ::giggle::

I posted a recipe for Marinara Sauce a few months ago, and said I would be releasing the Zoodle Chicken recipe soon, so here it is.

This is a great warm comfort food for chilly nights.

Zoodle Chicken 500x375

Zoodle Chicken
1 serving

15 minutes prep
30 minutes start to finish

3.5 oz boneless skinless chicken breast, cut in bite size pieces
2 tbsp chicken homemade chicken broth
salt and pepper to taste
Italian seasonings of choice
1 small zucchini, shredded
Marinara Sauce

Shred your zucchini however you can, even using just a peeler can accomplish the task.

Quickly pan fry on medium heat your chicken and seasonings of choice using 1 tbsp of chicken broth for moisture and so the chicken will not stick.  Brown then add the Marinara Sauce.  Remove from pan when done.

In the same pan, quickly soften the zoodles in 1 tbsp of chicken broth, only for a minute, then place on a paper towel to let excess moisture drain.  Place on plate, then pour the chicken and marinara sauce on top.
