Recipe: Broccoli Crunch

Recipe: Broccoli Crunch

I am going to start this recipe off with a warning.

THESE ARE ADDICTING

That is all.  ::giggle::

But seriously.

If you are going to make these for P2, keep in mind that if you choose to eat the entire recipe, it will take up 1/3 of your allowed calories using The Biz Buzz Method (The First Step).  But oh my goodness, is it worth it!

There are two tricks with this particular recipe.

One is to make sure each and every piece is small (like the piece on the right of the picture) – the smaller they are, the more crunchy it gets, and then […]

Recipe: Cheesecake in a Mug

Recipe: Cheesecake in a Mug

Do you ever get those temptations to have something sweet, but you just don’t want to make a whole batch of something because you don’t want it sitting in your kitchen screaming your name all week?

::giggle::

Well, I get that way sometimes.  HA!

My daughter has been finding all these recipes online recently about something-in-a-mug.  One serving of something, and one serving only.

I thought to myself, what an ingenious idea!  Let me create some P3 friendly recipes like that!

Once you make this, you can garnish it with almost anything you want, I chose pecans and strawberries, only because they are two of […]

Recipe: Easy Peasy Roast Beef

Recipe: Easy Peasy Roast Beef

Who doesn’t like roast Beef?

Sometimes on P2 we get the idea that food has to be bland and not interesting.  Why deprive yourself of a great tasting meal just because you are on P2?

Like the title says, this is easy peasy, and depending on what cut of beef you use, can be quick (some cuts might require more time simmering).

You can even cook this ahead and freeze in appropriate portions, and grab and go!  If you are looking for a place to fit some clean fats in, then a dollop of sour cream will go nicely with this.  Yum!

Enjoy!

Easy […]

Recipe: Chocolate Mug Cake (Dairy and Gluten Free)

Recipe: Chocolate Mug Cake (Dairy and Gluten Free)

My nemesis is not desserts (especially chocolate), so I don’t test them often.

However, I know that if there is one thing that people miss the most when trying to maintain drastic weight loss, it seems to be desserts.

I try to accommodate.

::giggle::

What I like about this is that it’s only one serving.  Even though it’s legal for P4, and it wont hurt you like it’s wheat counterpart, it’s still loaded with carbs so it’s not an everyday thing.

One serving means you get that craving out of the way, without a whole pan full of sweets staring you in the face for […]

Recipe: Mexican Chicken Soup

Recipe: Mexican Chicken Soup

When it’s cold, what is better than a cup of soup?

Better yet, a SPICY cup of soup.

It just warms you from the inside out.

Just because you are on P2 does not mean you have to suffer with plain and bland foods.  Kick them up a notch (or two) by using spices!

Be careful however, spices do have calories, and when you are dealing with a limited amount of calories during the day, they can add up quite quickly.

Did you know that as long as the serving size listed on a label has less than five calories that the company can legally […]

Sports parties.

They are all over the place come January.

You need something simple, and legal, yet delicious to take so that you don’t go backwards on all the progress you made during the proceeding weeks getting all that holiday weight back off.

::giggle::

But seriously.  This stuff is good.  Very simple to make, very tasty, and if you don’t make a double recipe, you are going to be very sorry because you will have nothing left for yourself.  HA!

I seriously love me some of those mini peppers, and I find the sweet crunch of the peppers blends nicely with the salty and creaminess […]

Recipe: P2 Potassium Salad

Recipe: P2 Potassium Salad

I wrote an article not to long ago on the value of looking at your potassium numbers in relation to your sodium numbers.

The article leaned toward using the formula contained within during the maintenance phase of your weight control journey.  But some people don’t realize that it is advantageous to follow that rule of thumb during your P2 as well.

I have what I call a “Potassium Day” that you can use on P2 that is almost a miracle for helping you get yourself out of a stall, or to use after a night of indulgence […]

Recipe: Strawberry Cheesecake (without the cake!)

Recipe: Strawberry Cheesecake (without the cake!)

Yum!

I wrestled with just writing that and be done with it.  But no, that isn’t my style.  ::giggle::

Cheesecake is one of those things that everyone has their favorite recipe.  For me, the less ingredients the better.  But making a wheat free cheesecake isn’t an easy endeavor.

And, I am all about ease.

These nummy morsels will satisfy ANYONE’s lingering desire for something sweet, cheesecakeyish (yeah, I just made that word up) without the humbug of baking.  Ready in less than 20 minutes!

Strawberry Cheesecake (Without the Cake!)
4 servings

15 minutes prep
45 minutes start to finish

1 lb package fresh strawberries
8 oz block cream cheese, at […]
