I love high fat, did I ever mention this?

This was so super simple to make, from start to finish it was around 20 minutes. And as it was cooking my daughter was like, Mom, what smells so good? Guess who got the only serving I made that day?

Ok, so it’s avocado season again. And when I say avocado season, I mean it’s the season where you can pick them up at the store for a dollar a piece. That is a steal of a deal for a meal!

I love avocados just as serving platters, as this recipe attests to. You can do just about anything you want with the stuffing, experiment. Yum, I love the freshness of this recipe.

Yum, pumpkin.

You know, I never know whether or not to treat pumpkin as a P3 or a P4 food. It works for some as a P3 food and for others as a P4 food. So I leave the decision up to you.

This is a really nice variety of flavors, and perfect for cold nights. It’s purposely been padded with a little extra fat in the form of butter, so adjust to taste.  Most awesome with a cold sweet dressing salad, then you have a whole variety of flavors your taste buds will thank you for!

Earlier this week I was caught without groceries, don’t you hate when that happens?  You have to get creative, especially when you don’t like grocery shopping as it stands.  HA!

These were really delish, and I have to say I prefer them cold as an appetizer rather than a meal (which is how I ate them!) – so this would be a great dish to take to a gathering.

Who doesn’t love soup?

This one is so simple and totally yummy!  And it’s one of those recipes when I can’t find anything else to eat in the house, I usually have these ingredients on hand anyway, so I throw it together.

Cauliflower Cheese Soup
6 servings

15 minutes prep
55 minutes start to finish

3 tbsp butter
1 sweet onion, diced
1 head cauliflower chopped (or one bag of frozen)
4 cups chicken broth
1.5 cups sharp cheddar, shredded (or your favorite kind)

In case you haven’t noticed, this week’s recipes are about cabbage and apples. I had a plethora of both that I needed to use up.
