Recipe: Avocado Feta Salad

Recipe: Avocado Feta Salad

Is it possible to be a avocado-holic? If so, I admit that I am powerless over avocados.

::giggle::

But seriously folks. What a wonderful piece of perfection an avocado is. It is my mainstay in the high fat diet. And when they are 10 for $10 at my local grocery store, well then, it’s time to fiddle with perfection!

Two qualities of avocados that I adore: high in potassium and lots of fiber!

This recipe is my mainstay on the high fat diet. I have this available whenever avocados are in season. LOVE LOVE LOVE this recipe because in actuality, you can […]

Recipe: Bacon and Cheese Stuffed Portobello

Recipe: Bacon and Cheese Stuffed Portobello

There are days when I prefer just to go meatless.

In fact, not too long ago I was in the habit of doing Meatless Monday’s.  I did this because usually my weekends were a grilling fest and I had unhealthy amounts of protein and I just wanted to give my body a rest.

I have gotten out of that habit, but after sampling this recipe, I think I might just develop it once again.

This was beyond my normal yum factor.  It was so incredibly rich, I could barely finish it for dinner, but I made myself.  ::giggle::

Pair this with a simple salad […]

Recipe: Blender Hollandaise Sauce

Recipe: Blender Hollandaise Sauce

Some people stay away from making Hollandaise Sauce because it looks to complicated. Who really understands anything about double boilers???

::giggle::

If it ain’t easy, I ain’t gonna do it, plain and simple.

THIS IS EASY! Give it a shot!

Nummy on asparagus. Shown here, I layered it on some quickly pan fried in butter cut up portabella mushrooms, an egg, and some bacon bits. I served it with a chopped salad and it became a great brunch for Sunday morning!

Enjoy!

6 servings

5 minutes prep
10 minutes start to finish

3 egg yolks

Recipe: Pumpkin Chipotle Sauce

Recipe: Pumpkin Chipotle Sauce

Yeah, I am on a pumpkin kick, for sure.

Just shoot me already.

::giggle::

I am finding more and more things to make with pumpkin, so you will just have to put up with it.  Last year there was a pumpkin shortage so I definitely did not get my fill.  I am making up for lost time.

This dish is SPICY, so it’s perfect for cool fall evenings … warming the inside as well as warming the outside.

I used zoodles, but you can actually use almost anything.  Quite frankly, I made this, took one serving to take the picture, then I ate […]

Recipe: Tzatziki

Recipe: Tzatziki

Who doesn’t love Gyro’s???

The sauce that makes the whole thing is something called Tzatziki. When this stuff is made right, it’s to die for, quite seriously.

Since most of us don’t do wheat anymore, pita is off the menu, so the next best thing is a Gyro Salad.  My local Greek Restaurant makes a killer Gyro Salad – I have yet been able to replicate the meat and it seems that all Greek chefs don’t like to share.

Scares me sometimes.

HA!  I digress.

A grilled meat salad topped with this sauce is something to be treasured.  It’s simply divine.

The trick with […]

Recipe: Pumpkin Mock Danish

Recipe: Pumpkin Mock Danish

Pumpkin.  Yum.

When I was first doing Atkins for real, not just playing around with it, I came across the beloved “Mock Danish”.  At first, it meant nothing to me as I am not a sweet lover. So “Danish” turned me off.

On the support group forum I belonged to however, they kept singing it’s praises and I finally succumbed. And I am glad I did! It was heavenly, and oh so filling! It kept me satiated for hours. Better than that, it was excellent cold, so I could make a few and keep in the fridge for those times […]

Recipe: Stuffed Mushrooms with Creamed Chicken

Recipe: Stuffed Mushrooms with Creamed Chicken

Mushroom and cream go together like peas and carrots. ::giggle::

But seriously, mushrooms are delectable with any sort of creamy concoction, and this recipe is no exception!

I have to admit something … when I tested this recipe, these were great hot, but they were also delicious COLD!  So it’s a great make ahead and take with you on the go type of meal, and it’s really incredible how satiating just a serving of these are!

I use canned chicken with this recipe.  I happen to be able to get a brand of canned chicken at my local WinnDixie that is […]

Recipe: Broccoli Cheese Soup

Recipe: Broccoli Cheese Soup

It’s officially fall, and what better way to celebrate it than with a nice warm soup for those cold evenings?

I have to ultimate favorite soups in the world, clam chowder (is that even a soup?) and potato.  Well, if you are trying to be a low-starcher, then potato is pretty much out.  So the next best thing?  A thick Broccoli and Cheese soup.  It’s very close to being the comfort food that potato soup is.

This recipe is fast and easy, and it is usually something I can make with ingredients I always have on hand.

If you ask me, […]
