Recipe: Coconut Butter

Recipe: Coconut Butter

This really isn’t a recipe, but more about how much I am in love with coconut butter!  ::giggle::

I am really trying to move away from dairy being the predominant high fat source, so looking more and more into using nut butters as a substitute for dairy, for some things.  With coconut butter being 87% fat, it fits in very nicely with the HIGH FAT lifestyle.

Coconut butter however has been cost prohibitive for me, I couldn’t justify purchasing a jar for $12-$14 and kept putting it off.  I came across how to make it yourself, and I had a pound of […]

Recipe: 80% Fat Breakfast – Bacon, Eggs, Avocados and Tomatoes with Spicy Mayonnaise

Recipe: 80% Fat Breakfast – Bacon, Eggs, Avocados and Tomatoes with Spicy Mayonnaise

Been working with a few clients lately (as guinea pigs!) to test a true ketogenic diet, which is at least 80% fat.

For some out there, it’s pretty easy to get your fats up to 65-70% – it’s that extra 10-15% that leaves them scratching their head.

If there is one thing I can do, and do well, is to manipulate a menu to meet requirements, no matter what it is.

There is a buzz right now all around the internet about being in nutritional ketosis, and using that as a way to either lose weight, or for some, just simply maintain when […]

Recipe: 80% Fat Lunch – Creamed Spinach and Chicken on a Bed of Asparagus

Recipe: 80% Fat Lunch – Creamed Spinach and Chicken on a Bed of Asparagus

I love high fat, did I ever mention this?

This was so super simple to make, from start to finish it was around 20 minutes. And as it was cooking my daughter was like, Mom, what smells so good? Guess who got the only serving I made that day?

::giggle::

This debunks the theory that you can’t have much veggies while on a true ketogenic diet, or you can’t put yourself into nutritional ketosis with veggies. I say, bah humbug. Don’t ever tell me you can’t do something.

I do have to admit however, that this is awfully GREEN – it needs some color, […]

Recipe: Avocado Stuffed with Seafood

Recipe: Avocado Stuffed with Seafood

Ok, so it’s avocado season again. And when I say avocado season, I mean it’s the season where you can pick them up at the store for a dollar a piece. That is a steal of a deal for a meal!

I love avocados just as serving platters, as this recipe attests to. You can do just about anything you want with the stuffing, experiment. Yum, I love the freshness of this recipe.

Enjoy!

Recipe: Pumpkin Curry Soup

Recipe: Pumpkin Curry Soup

Yum, pumpkin.

You know, I never know whether or not to treat pumpkin as a P3 or a P4 food. It works for some as a P3 food and for others as a P4 food. So I leave the decision up to you.

This is a really nice variety of flavors, and perfect for cold nights. It’s purposely been padded with a little extra fat in the form of butter, so adjust to taste.  Most awesome with a cold sweet dressing salad, then you have a whole variety of flavors your taste buds will thank you for!

Enjoy!

Thanks goes to Linda for tweaking […]

Recipe: Spinach Balls – Gluten Free!

Recipe: Spinach Balls – Gluten Free!

Spinach is so utterly versatile, don’t you think?

You can do so many things with it, but I gotta tell you that Spinach Balls are something I have missed for what seems like decades.  They are utterly delish, and I could never ever contain myself around them.  Little did I know back then it was because of the wheat!

So, I was experimenting with nut flours the other day, and I don’t know what made me think about it, but I thought to myself, would a nut flour work for spinach balls instead of that herbed dressing that shall remain nameless.  So […]
