Recipe: Spinach and Artichoke Dip (NonDairy)

Ever try a recipe which you just know can’t be any good, but you are willing to give it a try anyway because you know it’s good for you, in fact, better for you than most other things … and then you are SHOCKED because it’s way better than you dreamed of?

This is one of those recipes.

Who knew cashews could taste like cheese?

If you did know this, then how come you haven’t said anything, like yelled it from the mountaintops that roasted and unsalted cashews are an awesome sub for cheese in dishes that require heat (temperature)?

I made this, and […]

Recipe: Carolina Coleslaw

Recipe: Carolina Coleslaw

Where I come from (Honolulu, Hawaii) coleslaw was just a mixture of cabbage and vinegar, salt and pepper, and a splash of sugar to take some acidity away.  Tasty, but not very exciting.

When I moved to South Carolina back in the mid 90’s, I was introduced to a most unusual concoction, the Eastern North Carolina Pulled Pork BBQ Sandwich.  I dare say that at first, I felt it looked rather gross, but I was told to give it a try.  Now keep in mind, this was back in the mid 90’s, I didn’t know any better about wheat.  ::giggle::

Who […]

Recipe: Cowboy Caviar

You know what?  I could live on salsa, any type of salsa or dip every day for the rest of my life.  Give me some sort of dip or salsa, some raw veggies and some blue corn chips, and I am a happy camper!!!  Do you know how many dips and salsas there are in the world?  I could probably try one a day and still never touch the sheer amount of variety!  (This is just a sample!)

This one I came across simply by accident one day.  I had a can of black beans and a […]

Recipe: Thai Beef Cucumber Salad

Recipe: Thai Beef Cucumber Salad

During my first couple of rounds, I followed The hCG Protocol pretty darn strictly, but that doesn’t mean I didn’t try to expand the rules a little.  HA!

Technically, cilantro is not listed in the recommend food list of Pounds and Inches.  But I knew I wanted it.  I wanted something to spice up my foods, and I missed it.

I did some extensive research about cilantro and figured that the health benefits outweighed any detrimental effects it might have had on The hCG Protocol.  Oh yeah, call it justification.

But seriously, Dr. Simeons does mention specifically that you are allowed […]

Recipe: Salsa

Recipe: Salsa

I had no idea, but did you know that Salsa is considered the number one condiment in the United States?  According to Food Product Design magazine, as of December 2000, salsa replaced ketchup as the number one condiment in the US!

Salsa is one of those things that everybody has their own recipe as to what they think is best, however, I felt it important to provide you with a base that you can tweak on your own.

I have found the following recipe fits that requirement quite nicely.

Make sure you pay attention to the notes at the bottom of the […]
