Earlier this week I was caught without groceries, don’t you hate when that happens?  You have to get creative, especially when you don’t like grocery shopping as it stands.  HA!

These were really delish, and I have to say I prefer them cold as an appetizer rather than a meal (which is how I ate them!) – so this would be a great dish to take to a gathering.

The recipe calls for using frozen chopped spinach, but I had a bag of spinach that needed to be used up, so I chopped that up instead.

Who doesn’t love soup?

This one is so simple and totally yummy!  And it’s one of those recipes when I can’t find anything else to eat in the house, I usually have these ingredients on hand anyway, so I throw it together.

Cauliflower Cheese Soup
6 servings

15 minutes prep
55 minutes start to finish

3 tbsp butter
1 sweet onion, diced
1 head cauliflower chopped (or one bag of frozen)
4 cups chicken broth
1.5 cups sharp cheddar, shredded (or your favorite kind)
sea salt to taste
cracked pepper to taste
cayenne to taste, optional only if you like it spicy

In case you haven’t noticed, this week’s recipes are about cabbage and apples. I had a plethora of both that I needed to use up.

The original of this recipe was to be made with bacon instead of chicken. I opted to try it with chicken, modifying some of the ingredients.

In retrospect, I think it would be better with the bacon, although with the chicken it was most tasty!

There are days when I prefer just to go meatless.

In fact, not too long ago I was in the habit of doing Meatless Monday’s.  I did this because usually my weekends were a grilling fest and I had unhealthy amounts of protein and I just wanted to give my body a rest.

I have gotten out of that habit, but after sampling this recipe, I think I might just develop it once again.

This was beyond my normal yum factor.  It was so incredibly rich, I could barely finish it for dinner, but I made myself.  ::giggle::

Some people stay away from making Hollandaise Sauce because it looks to complicated. Who really understands anything about double boilers???

THIS IS EASY! Give it a shot!

Nummy on asparagus. Shown here, I layered it on some quickly pan fried in butter cut up portabella mushrooms, an egg, and some bacon bits. I served it with a chopped salad and it became a great brunch for Sunday morning!

Who doesn’t love Gyro’s???

The sauce that makes the whole thing is something called Tzatziki. When this stuff is made right, it’s to die for, quite seriously.

Since most of us don’t do wheat anymore, pita is off the menu, so the next best thing is a Gyro Salad.  My local Greek Restaurant makes a killer Gyro Salad – I have yet been able to replicate the meat and it seems that all Greek chefs don’t like to share.

Scares me sometimes.

HA!  I digress.
