Sweet Potato Chips

Sweet Potato Chips

Ah, the joys of sweet potatoes!

Let me share some facts with you:

Sweet potatoes are high in Beta Carotene and vitamins E and C.  They are a good source of fiber when eaten with the skin on.  They are an excellent source of copper, manganese, potassium, iron and vitamin B-6.

Sweet potatoes are a superfood and they taste great!  They go with almost anything; poultry, pork, beef, lamb or seafood.  They can also be substituted in virtually any recipe that calls for apples, squash or white potatoes.

Sweet Potatoes made the Clean 15, which means your potential exposure to toxins is […]

Who Knew This About Zucchini?

Who Knew This About Zucchini?

I love it when my clients make me do research.

Seriously.

The more a client is vocal with me, asking me questions, testing my knowledge, the more we both learn.

This morning a client asked me:

Can I do zucchini with my steak (day)? We have a ton coming from our garden right now.

Believe it or not, no one has ever asked me that before!

As is my way, I started to research, and what I found out was pretty darn awesome!

When I create a correction day, I take a lot of different things into consideration.  For a steak or salmon day, there are two […]

Recipe: Strawberry Cheesecake (without the cake!)

Yum!

I wrestled with just writing that and be done with it.  But no, that isn’t my style.  ::giggle::

Cheesecake is one of those things that everyone has their favorite recipe.  For me, the less ingredients the better.  But making a wheat free cheesecake isn’t an easy endeavor.

And, I am all about ease.

These nummy morsels will satisfy ANYONE’s lingering desire for something sweet, cheesecakeyish (yeah, I just made that word up) without the humbug of baking.  Ready in less than 20 minutes!

Recipe: Spinach and Artichoke Dip (NonDairy)

Ever try a recipe which you just know can’t be any good, but you are willing to give it a try anyway because you know it’s good for you, in fact, better for you than most other things … and then you are SHOCKED because it’s way better than you dreamed of?

This is one of those recipes.

Who knew cashews could taste like cheese?

If you did know this, then how come you haven’t said anything, like yelled it from the mountaintops that roasted and unsalted cashews are an awesome sub for cheese in dishes that require heat (temperature)?

I made this, and […]

Recipe: Bombs of Fat

Recipe: Bombs of Fat

The beauty of living the high fat way of life is that hunger is seldom an issue, and energy is in abundance, that sometimes you just forget to eat.

I know, unreal right?

But seriously, not eating is really NOT an option when you are doing high fat.  High fat works better when you are not starving yourself, but instead, giving your body the energy it needs to serve you well.

That is why these little things are so incredibly awesome on a high fat way of life.  It provides in just a little package everything that you would need to move on […]

Recipe: Paleo Carrot Muffins

Recipe: Paleo Carrot Muffins

What is Paleo anyway?

If you look around the internet, you are going to find a whole host of definitions. But for simplicity sake, consider it basically this:

Meat + Veggie (Fruits in Moderation) + Fat + Herbs/Spices = Happy Paleo

I am not fond of the Paleo lifestyle, preferring more of a Primal outlook, this is a subject for another day, the whole Paleo vs Primal thing.

In any case, I was sent this recipe by a client asking me to give it a shot.  For something that is non-grain, gluten-free, they were pretty darn tasty … if you can get […]

Recipe: Biz’s Confetti Coleslaw

Recipe: Biz’s Confetti Coleslaw

I love food that takes forever to eat.  This is one of those foods.

Because of all the crunching you have to do, even just a small amount takes forever to eat.  It’s perfect if you are trying to do a raw day, and let’s not discount the fact that it’s pretty food.  Look at all those colors!!!

Pretty food that tastes good, raw, and high fat…can’t beat it.  Oh yeah.

Just a note.  The bacon is supposed to be put on the slaw just before you eat it, it will have a tendency to get a little soggy if you don’t.  The […]

Recipe: Spanish Cream

Recipe: Spanish Cream

When I was growing up, this was ALWAYS in the fridge.  It is one of those things you never get tired of.  Recently I found out that some type of meringue is a staple for many cultures.  Most cultures will have some sort of meringue as a normal after dinner snack.  This is no exception.  My Mom tells me that it’s from Portugal, but couldn’t find verification of that?  HA!

When Googling around to see if gelatin was an OK Phase 3 food, I came across this fascinating article.  It’s quite long, so if you want the […]
